Birds Eye Chilli & Raspberry

A feisty creation with a pleasant surprise. Dark milk ganache infused with Birds Eye Chillis form the base of this bon bon. A raspberry compote will soften the spiciness and provide a fresh and pleasant experience.

This bon bon is spicy but well balanced, so one the heat presented itself it will gracefully depart again.

Cast in a 46% dark milk chocolate.

 

Grapefruit Vanilla

An overnight infusion of Blood Grapefruit brings out the zesty and refreshing notes of citrus in this perfect combination of a Tonga Vanilla and Grapefruit ganache.

The grapefruit compote on top of the ganache boosts the citrus just a little more for freshness and that extra grapefruit taste.

Yuzu

As an East Asian citrus fruit Yuzu provides a different flavour profile. It is often described as a blend of different citrus like lemon, lime grapefruit. With its distinctive flavour and absolute favourite. Build on a white chocolate ganache a perfect combination.

Black Sesame

A creamy ganache refined with Japanese black Sesame (MILK)

Passion Fruit

Similar to the Yuzu - The Passionfruit is build on a white chocolate ganache refined with the Kingdom of Tonga Vanilla bean which adds a subtle yet powerful richness to balance the refreshing passionfruit perfectly.

Sakura (Milk/ Gluten)

A cherry Blossom Gamache with a sable cookie crunch.

Japanese Melon

A melon ganache, refined with Yubari Melon (Milk)

Barrel Aged English Mint

A dark chocolate ganache with summer down barrel aged mint. (Milk)

Piemonte Hazelnuts refined over 24h to create a perfect smooth praline complemented with popping candy to surprise and delight.(NUTS)

A vegan Yuzu ganache made with oat cream and coconut in a vegan white chocolate shell.

Green Apple Caramel

A vegan green apple ganache with vegan oat cream caramel in a vegan white chocolate shell.

Tahitian Vanilla

“Hot Date with a FunGui”

Based on Kate Gerwin’s creation. A dark ganache with Johnny Walker infused with a mushroom medley and a floral fig gel. (Milk/ traces of Mushrooms/ Alcohol)

Spiced Mandarin

Mandarin ganache with mandarin gel and evaporated Mandarin Napoleon (Milk/ evaporated Alcohol)

Matcha

A short excursion to Japan with this rich Matcha BonBon. Green tea in the white couverture shell and in the ganache carries through the lovely grassy bites of two types of green tea. Tonga Vanilla and French butter enrich and balance to create the typical matcha taste.

Liquorice Raspberry

„I don’t like liquorice“ - should be the name of this BonBon, as after tasting this creation you might change your mind:

A complex and buttery liquorice caramel with authentic Salmiac salt forms the base on which raspberry delights the palate.

Iranian Pistacchio

The greenest of Pistachios, the Iranian Pistachio has been carefully refined to provide a crunchy yet smooth mouthful. A Tongan Vanilla Bean ganache helps to take the taste of the delicate pistachios further while fleur de sel salt brings out even more taste.
